Boston Bibb Blintzes: a low-calorie, highly nutritious treat

 

Ingredients (per serving):

  • 3 large leaves Boston Bibb lettuce
  • .75 cup loosely packed non-fat cottage cheese
  • 20 grams raisins, finely chopped
  • 14 grams pecans, finely chopped
  • 1/2 teaspoon honey
  • a sprinkle of cinnamon
  • a smidgeon each of salt and pepper, to taste

Directions:

  1. Combine cottage cheese, raisins, pecans, honey, cinnamon, salt and pepper.
  2. Divide mixture into three portions and plop each portion onto the center of a bibb leaf.
  3. Fold the sides in and roll from bottom to top to make a little packet of each.
  4. Pick one up with your fingers and enjoy. Try not to keep saying, “Yum. Yum.”

  1. My divinely nutritious treat: a few bites of chocolate – with a high caliber cocoa percentage. Somehow I feel somewhat virtuous as I get the chocolate fix. Actually, I’m just kidding myself. No comparison to Boston Bibb lettuce, which I love for his tender taste.

  2. I love the concept of these, but I’m hesitating at the raisins. But the wonderful thing about a recipe like this is that it’s so easily adaptable to the picky (ahem, selective) eaters in the crowd! Now my mind is racing with a variety of variables I could try. But first, I’d best get to work on the writing I promised myself I’d do. Or the unpacking. Makes me want to noodle around in the kitchen even more!

    1. My 2 favorite activities for passing time when there’s something I’m supposed to be doing but don’t want to — 2) social networking and 1) noodling around in the kitchen. I’m going to indulge in both of them tonight!!

      Finely-chopped dried apricots?

    1. I saw a little girl in the grocery store checkout an hour ago, with a plastic-wrapped wedge of fresh watermelon, and she was holding it up to her mouth with a look of sheer bliss on her face — anticipation of what is soon to come.

      I need to go get me some watermelon!!

  3. Low calorie and delicious, I felt sure I would love it even before I read the recipe. And now that I have (read the recipe) I happy to say that I found it delicious sounding. 😉

  5. I really like this combination, since I like the idea of sweet, crunchy and spicy together. All perfect savory elements included. I like cinnamon for its nutrients and just used it in an interesting and natural ‘ant prevention’ concoction, Tracy. Smiles, Robin
